3Propane & smoke
Fuel plan: one full 20 lb tank + one spare for insurance.
The ~7-hour smoke at 250°F uses roughly a third of a full tank (a 20 lb tank holds ~430,000 BTU; the smoker draws ~15–20k BTU/hr → ~21–28 hours per tank). Mesquite chips or chunks go in the smoker's chip box.

4Heat notes
- Bloom the hot chili powder in the oil with the celery for 45–60 seconds before any liquid goes in — that's seasoned heat, not just hot.
- Keep the jalapeño seeds in. All four of them.
- Salt to taste at the very end, after the beans have had their hour.
